ready to roast!
last night it was just TOO HOT to grill. plus i'm nursing my first big sunburn of the year, and i just couldn't bring myself to go back out in the sun. i am running low on groceries, so i came up with this little concoction and it ended up being a very refreshing and light main dish.
ROASTED LEMON CHICKEN
3-4 chicken breasts
2 lemons, one for juicing, one for slicing
red onion, sliced
1 tbl. olive oil
salt and lemon pepper to taste
1 tsp. basil
place the chicken in a baking dish. slice one lemon and 1/4 of a red onion over the chicken. combine the fresh lemon juice, olive oil and spices and drizzle on top. roast uncovered in 400 degree oven for about 40 minutes.
i can't wait to try this again with oranges and rosemary.
the possibilities are endless!
