2 cooked, shredded chicken breasts, or one large can of chicken
1 ripe avocado
2-3 tbl. lime juice
i like a good chicken salad, but i don't care for all of the mayo and yogurt that you usually have to add to get it to taste right. i discovered this a simple recipe a few weeks ago, and we've been having it for lunch (most days). just mash the avocado and stir in the chicken and lime juice. it's so easy, and i'm happy to have found a healthier alternative to a warm weather favorite.
