"healthy" chicken strips


do your kids like breaded chicken?  i thought so...

4 chicken breasts
1 egg, slightly beaten
1 tbl. honey
1 tsp. dijon mustard
2 cups cornflakes, finely crushed.  regular cornflakes are good, but kashi or cascadian farms 
(or any healthy brand) would be a little better.

preheat oven to 400 degrees.  cut chicken into strips.  in a shallow dish, combine egg, honey, and mustard.  have cornflake crumbs ready in another dish.  dip chicken into egg mixture, then coat in cereal.  place on ungreased baking sheet and bake for approximately 15 minutes or until done, turning once while baking.  

i make my own honey mustard using equal parts honey and dijon mustard.

  2. that sounds very good! i make pecan chicken, but i haven't tried almond.
