pistachio chicken salad

1/2 cup pistachio nuts, finely ground
2 or 3 chicken breasts
1 tablespoon extra-virgin olive oil
romaine lettuce
grape tomatoes
fat free feta

preheat the oven to 375 degrees.  mix the nuts on a plate with a little salt and pepper and heat oil in skillet to medium.  press the chicken into the nuts and cook in skillet, two minutes per side.  place chicken into baking dish and bake for 15 minutes.

tear romaine and slice tomatoes and avocado.  top with warm, sliced chicken breasts and feta.  drizzle with olive oil and lemon (or lime) juice and you have reached perfection.
